Healthy Holiday Recipes: A Quick and Festive Christmas Menu
Bring holiday cheer to your table with these healthy holiday recipes, featuring a delightful spiced banana painkiller cocktail and a nutritious Christmas menu that's both quick and delicious.
Rum is a wonderful ingredient to cook with—and, of course, to sip and savor! Living between the Virgin Islands and the charming city of Belmont, NC, I’ve discovered that Belmont is home to Muddy River Distillery, a fantastic rum producer just around the corner. To bring some holiday cheer to your table, here are some healthy holiday recipes, including one of their delightful drinks paired with a quick and nutritious Christmas menu.
Spiced Banana Painkiller
Prep Time: 10 minutes | Serves: 6
Ingredients:
- 9 oz spiced rum (1.5 oz per person)
- 1 ripe banana or 3 oz banana liqueur
- 9 oz orange juice
- 9 oz pineapple juice
- 6 oz cream of coconut (such as Coco Lopez)
- Ice (enough to blend and chill the drink)
- Garnish: Grated nutmeg and pineapple leaf (optional)
Instructions:
In a blender, combine the spiced rum, banana, orange juice, pineapple juice, and cream of coconut. Add a generous amount of ice and blend until smooth. Taste and adjust sweetness or creaminess as desired. Pour into glasses and garnish with grated nutmeg and a pineapple leaf.
Herb-Roasted Turkey Breast
Prep Time: 10 minutes | Cooking Time: 1.5 hours | Serves: 6–8
Ingredients:
- 1 turkey breast (about 4–6 lbs)
- 2 Tbsp olive or avocado oil
- 1 Tbsp fresh rosemary, chopped
- 1 Tbsp fresh thyme, chopped
- Himalayan salt, to taste
- Freshly ground black pepper, to taste
Instructions:
Preheat the oven to 350°F (175°C). Rub the turkey breast with oil, rosemary, thyme, salt, and pepper. Place it in a roasting pan. Roast for about 1.5 hours, or until the internal temperature reaches 165°F (75°C). Remove from the oven and let it rest for at least 10 minutes before slicing.
Quinoa & Cranberry Salad
Prep Time: 5 minutes | Cooking Time: 15 minutes | Serves: 4–6
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- ½ cup dried cranberries
- ½ cup chopped pecans or walnuts
- ¼ cup chopped fresh parsley
- Juice of 1 lemon
- Himalayan salt, to taste
- Freshly ground black pepper, to taste
Instructions:
In a saucepan, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes. Fluff the quinoa with a fork and let it cool. In a large bowl, combine the quinoa, cranberries, nuts, parsley, lemon juice, salt, and pepper. Mix well to combine all ingredients.

Roasted Brussels Sprouts with Balsamic Glaze
Prep Time: 10 minutes | Cooking Time: 20–25 minutes | Serves: 4–6
Ingredients:
- 1 lb Brussels sprouts, halved
- 2 Tbsp olive oil or butter
- 1 tsp dried oregano
- Himalayan salt and pepper, to taste
- 2 Tbsp balsamic vinegar
Instructions:
Preheat the oven to 400°F (200°C). Toss the Brussels sprouts with olive oil, oregano, salt, and pepper. Spread them on a baking sheet in a single layer. Roast for about 20 minutes until golden and crispy. Drizzle with balsamic vinegar before serving.
Sweet Potato Mash
Prep Time: 10 minutes | Cooking Time: 15 minutes | Serves: 4–6
Ingredients:
- 3 large sweet potatoes, peeled and cubed
- 1 Tbsp olive oil
- 1/3 cup unsweetened almond milk or coconut milk
- Himalayan salt and pepper, to taste
- Garnish: Dabs of butter and fresh snipped parsley
Instructions:
Boil the sweet potatoes in salted water until tender, about 15 minutes. Drain well. Mash the sweet potatoes with olive oil and milk until smooth. Season with salt and pepper. Garnish with dabs of butter and fresh parsley before serving.
Dark Chocolate Dipped Fruit
Prep Time: 10 minutes | Cooling Time: 15 minutes | Serves: 6–8
Ingredients:
- 1 cup good-quality dark chocolate pieces or chips
- Fresh fruit (strawberries, orange slices, bananas, or fruit of choice)
Instructions:
Melt the dark chocolate in a microwave-safe bowl or using a double boiler. Dip the fresh fruit pieces halfway into the melted chocolate and place them on parchment paper to cool. Allow the chocolate to set before serving.
