SMOKY ROASTED VEGETABLE MEDLEY
Prep time: 10 minutes. Cooking time: 25–30 minutes. Serves: 4
1 medium eggplant, sliced ½-inch thick
2 medium zucchini, sliced
2 medium potatoes, sliced
1 red bell pepper, sliced into thick strips
1 onion, cut into wedges
6–8 mushrooms, whole
2 tomatoes, halved or thickly sliced
2 tablespoons extra-virgin olive oil
1 teaspoon smoked paprika
½ teaspoon ground cumin
Salt & freshly ground black pepper
Optional: a sprinkle of sumac (for tang)

Preheat oven to 425°F. Line a large sheet pan with parchment. Arrange all vegetables in a single layer and drizzle with olive oil. Season with smoked paprika, cumin, salt, and pepper.

Roast 20–25 minutes, turning once, until edges are golden and lightly charred. Finish with a pinch of sumac for brightness.

To serve Stack or tile the vegetables on the platter and add:
• A garlicky yogurt dip, and
• A spicy roasted pepper sauce (recipe follows)

 

FIRE-ROASTED RED PEPPER SAUCE
Prep time: 5 minutes. Cooking time: 0 minutes. Serves: 4
1 cup jarred roasted red peppers, drained
1 small garlic clove
1 tablespoon extra-virgin olive oil
1 teaspoon lemon juice
Pinch red pepper flakes
Sea salt, to taste

Blend peppers with garlic, olive oil, lemon juice, and red pepper flakes until slightly chunky. Season to taste.

Serve room temperature. This sauce loves chicken, fish, grilled shrimp… or simply vegetables!

POMEGRANATE-GLAZED CHICKEN
Prep time: 15 minutes. Cooking time: 35–40 minutes. Serves: 4
8 bone-in, skin-on chicken thighs
1 tablespoon extra-virgin olive oil
Salt & freshly ground black pepper
1 cup pomegranate juice (100%)
3 tablespoons pomegranate molasses
2 tablespoons honey (or maple syrup)
1 tablespoon balsamic vinegar
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
Fresh thyme or parsley, chopped (for garnish)
1/3 cup fresh pomegranate arils (for finishing pop and antioxidants!)

Pat the chicken thighs dry and season generously with salt and pepper. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the thighs, skin-side down first, until golden and crisp — about 5–6 minutes per side.

In a small bowl, whisk together the pomegranate juice, molasses, honey, balsamic vinegar, garlic, cumin, and smoked paprika. Pour this glaze into the pan around the chicken (not over the top yet so the skin stays crispy) and bring to a gentle simmer. If the glaze reduces too quickly, splash in more pomegranate juice

Transfer the skillet to a preheated 400°F oven and roast 20–25 minutes, basting occasionally with the glaze, until the chicken is cooked through and the sauce has thickened to a syrupy consistency.

Remove from the oven. Brush the sticky glaze over the chicken, scatter fresh pomegranate arils and chopped herbs over the top and serve with extra pan sauce spooned over the chicken.

Hint: A squeeze of fresh lime at the end brightens the fruity flavor beautifully

 

LEMON-MINT QUINOA (Light + High-Protein)
Prep time: 5 minutes. Cooking time: 15 minutes. Serves: 4
1 cup quinoa, rinsed
2 cups water or broth
Zest + juice of 1 lemon
2 tablespoons chopped fresh mint
1 tablespoon extra-virgin olive oil
Salt & pepper

Cook quinoa until fluffy. Cool slightly; stir in lemon zest and juice, mint, olive oil, salt, and pepper.

Tip: The fresh citrus + mint quinoa pairs well with the chicken recipe as it cuts through the rich pomegranate glaze beautifully
