Thanksgiving Dish with a Touch of Spice

Some simple, delicious, and nutritious dishes for Thanksgiving! Just change the quantities based on the amount of people that turn up.

 

COCONUT CURRY LENTIL SOUP with KALE
Prep time: 10 minutes. Cooking time: 40 minutes. Serves: 4

1 tbsp coconut oil
1 large onion, peeled and chopped
3 cloves garlic, minced
2 tbsp finely grated fresh ginger
2 tbsp tomato paste or ketchup
3 tbsp curry powder
½ tsp hot red pepper flakes
5 cups vegetable broth
1 (13.5oz) can coconut milk
1 (14.5oz) can diced tomatoes
1.5 cups dry red lentils
Juice of 1 fresh lemon
Salt and pepper to taste
4 handfuls of chopped kale or spinach

Garnish: Chopped cilantro, optional

In a large heavy bottom saucepan, heat the coconut oil over medium heat and stir-fry the onion, garlic and ginger until the onion is translucent, about two minutes. Add the tomato paste (or ketchup), curry powder, and red pepper flakes and cook for another minute. Add the vegetable broth, coconut milk, diced tomatoes and lentils. Cover and bring to a boil, then simmer on low heat for about 30 minutes; until the lentils are very tender. Season with salt and pepper. Just before serving; stir in lemon juice and kale or spinach.

Note: Not necessary to soak lentils, but I like to rinse them and soak them for a few hours or overnight.

Note: Soup may be made ahead, cooled, frozen in airtight containers and re-heated over medium–low heat.

 

SPICED MASHED SWEET POTATOES
Prep time: 10 minutes. Cooking time: 15 minutes. Serves: 4

6 sweet potatoes
1 tbsp cumin
1 tbsp cinnamon
¼ cup skim milk (or dairy substitute)

Peel and dice the sweet potatoes. Add to a pot of boiling water and boil until just tender. Drain and place in a large bowl; mash until desired consistency is reached.  Add cinnamon, cumin, and milk. Mix all together and serve while warm.

 

MAPLE CINNAMON ROASTED VEGETABLES
Prep time: 10 minutes. Cooking time: 25 minutes. Serves: 4

Chopped vegetables (parsnips, Brussel sprouts, carrots, potatoes, squash etc.)
Pure maple syrup
Cinnamon

Preheat oven to 400ºF. Place all vegetables in a large bowl. Add a drizzle of maple syrup, just enough to coat the vegetables; sprinkle with cinnamon. Turn vegetables into a baking dish and roast about 25 minutes.

 

CRANBERRY CINNAMON APPLE BAKED BRIE (Not exactly healthy, but delicious)
Prep time: 5 minutes. Cooking time: 10 minutes. Serves: 8

1 wheel of brie
¼ cup dried cranberries
1 apple, cored and chopped
1 tbsp cinnamon
½ tsp brown sugar

Preheat oven to 350ºF. Take the wheel of brie and place it on a nonstick tray or a sprayed piece of aluminum foil. Add the dried cranberries and chopped apple on top, followed by the cinnamon and a sprinkle of brown sugar. Place in the oven for about 10 minutes, until apples soft and cheese warmed. Serve with your favorite crackers.
