Indulge Guilt-Free: Bok Choy & Pineapple Salad with a Healthy Chococado Shake

Carefully counting calories doesn’t have to be boring. This amazing Bok Choy and Pineapple salad is sweet, spicy, savory, and full of nutrients! Following it up with a game changer of a chocolate shake isn’t the sin you would think it to be, either. The shake tastes exactly like a traditional chocolate milkshake, except the ingredients are truly healthy! It’s one of my all-time favorites!

BOK CHOY & PINEAPPLE SALAD:
Bok choy – 1 large head, sliced thin
Pineapple – 1 whole, diced
Fresh mint – ½ cup, minced

Combine in a bowl and massage ingredients together, fully integrating the flavors. Serve in a pool of Sweet Ginger Cream Sauce.

SWEET GINGER CREAM SAUCE:
Raw cashews – 1 cup
Water – 3/4 cup
Raw honey – 3 Tbsp
Lemon – 1 whole, cut away from peel
Fresh ginger – 1” thick cut
Fresh jalapeño – 1” cut
Sea salt – 1 tsp  

Blend in a high-powered blender or food processor until smooth.

CHOCOCADO SHAKE
CHOCOCADO SHAKE

Vegan Bean Chili

CHOCOCADO SHAKE:
Unsweetened Almond Milk – 16oz
Pitted dates – ½ cup
Ripe avocado – ½
Raw cacao (chocolate) powder – ¼ cup

Blend until smooth, then add 1 ½ cups ice cubes and blend again. Serve with whipped coconut cream and cacao nibs!
