DOUBLE HONEY SPRING COOLER
Honeydew – 2 cups
Ice cubes – 2 cups
Honey – 2 Tbsp
Fresh mint – 10 leaves
Blend until smooth.
FRESH TOSTADOS
On a tostado shell, layer:
Refried black beans
Shredded lettuce
Fresh salsa
Notcho Cheese (recipe below)
NOTCHO CHEESE
Cashews – 1 cup
Water – 1 ½ cups
Nutritional yeast – ¼ cup
Sundried tomatoes – 10 each
Dried chipotle pepper – to taste
Blend ingredients in a food processor or high powered blender.
