Boat Bites: Cool Potluck Dishes

No need to get the kitchen or galley hot when preparing a covered dish for the next potluck. These quick and easy dishes are sweet and nutritious.  Make sure you bring a copy of the recipe.

 

PICKLED BEET SLAW

Golden Beet – 1, peeled & shredded
Chioggia Beet (Candy Stripe Beet) – 1, peeled & shredded
White Balsamic Vinegar – 1 cup
Honey – 4 Tbsp.
Garlic – 2 cloves minced
Sea Salt – 1/2 tsp.

In a bowl, whisk the vinegar, honey, garlic, and sea salt. Add the shredded beets and chill overnight before serving.”

 

Nectarine-Yogurt-Pie

NECTARINE PIE

Crust
Almonds -1 cup
Dates – 4, pitted

Blend in a food processor then press into a pie plate.

Filling:
Thai Coconut Meat – of 3 Coconuts
Honey – 4 Tbsp.
Lemon Juice – 1 lemon
Sea Salt – 1/8 tsp.

Blend in a food processor or high-powered blender.

Pour into crust and let cool for 1 hour before adding sliced nectarines and serving.
